One of my favourite cookbooks is ‘Vegetarian Cooking Without‘ by Barbara Cousins. All of the recipes in it are free from added sugar, gluten, yeast and saturated fat. There are recipes for soups, starters, salads, main courses and most importantly – desserts and baking!
There is also a very interesting opening chapter that talks you through issues such as the importance of having balanced blood sugar, suggested menus and cooking methods.
The best recipe that I’ve tried out so far, from ‘Vegetarian Cooking Without’ is the aubergine and sun dried tomato pate, which is great on some crackers or oatcakes!
