After finding out I have an egg white and egg yolk intolerance, I have been looking into various egg replacers. After doing some research on the Internet I found Ener-G Egg Replacer, which I then ordered on Goodness Direct to give it a try.
So far so good I gave some egg free muffins a try this morning and the results were good.

Unbelievably 1 packet of Ener-G Egg Replacer replaces 100 eggs in baking! However don’t think of it as an egg, it’s powder based and is not nutritionally the same as eggs, just a means to get baking for people who cant have eggs. Watch this space for more egg free baking ideas!
