Free From Chocolate Bar Recipe

I was feeling inspired so created a Free From Chocolate Bar Recipe and for a chocolate bar that is sugar free, gluten free, dairy free its a real winner. I cant wait to make the next batch. This recipe was inspired by the Free from cheesecake base which a friend suggested would be great with a chocolate topping so I gave it a try.

This recipe is a little free style as I have only made it once but really excited to share the concept as it’s so simple.

Free From Chocolate Bar Ingredients:

  • Mixed nuts – 1 cup (almonds, brazils, peanuts etc)
  • Dates – 1/2 cup (soaked)
  • Cocoa – 1/2 tsp
  • 1/2 Orange  Juiced or Water
  • Nutmeg – pinch
  • Cinnamon – pinch

and for the chocolate bar topping:

  • Large chunk of 100% chocolate
  • Cocoa – 1/2 tsp
  • Honey – 1 tsp (optional)
  • Apple juice (to sweeten)

In a food processor crush and mix the nuts of choice, the soaked dates, cocoa, nutmeg and cinnamon. Process gently to start with, and gradually add the orange juice (or water) until you get a cookie dough-like consistency, but still chunky. Place in a small flat tin and squish down and place in the fridge.

In a ban marie (glass bowl over boiling water) gently melt the 100% cocoa, mix in the cocoa, then you need to sweeten the cocoa mixture depending on your diet limitations you can add a small amount of honey and or some fruit juice. I juiced 1/2  an apple and a piece of fresh ginger and added this slowly to the mixture. Stir rapidly to make a chocolate paste or a good consistency. Taste  and adapt sweetening where required.

Spread the chocoalte paste over the base and add put back in the fridge. I then sprinkled a few linseeds over the top. Chill in the fridge for an hour until set and then enjoy!
